I finished the stock. i found that since i left a lot of the pieces bigger in size, that it worked well to let the veggies cook more like 3 hours, or you could crock pot it. anyway, this morning i scooped it out, mashed it through a strainer, and got
9 cups of homemade vegetable stock.
make sure there is room at the top for expansion if you want to freeze any...I dont want any overflow into the freezer.
